Recipe-of-the-Month: Chocolate Pâté

List of Ingredients

  • 1 ½ cups heavy cream, divided
  • 12 oz. semi sweet chocolate, chopped
  • 1 egg yolk
  • 1/3 cup corn syrup
  • ¼ cup butter
  • 1 tsp vanilla or flavoring of choice

Mixing Instructions

Chocolate pate

1. Line an 8X4X2 inch loaf pan with plastic wrap, letting the wrap extend over the edges of the pan.

2. Combine ½ cup of the cream and egg yolk, whisk lightly and set aside.

3. Combine the chocolate, corn syrup, and butter in a saucepan. Cook over low heat until melted and remove from heat.

4. Add the cream and egg mixture to the chocolate in the saucepan, return to stove, and cook for 1 minute over medium heat, stirring constantly. Remove from heat and let cook to room temperature.

5. Beat remaining cup of heavy cream with vanilla until soft peaks form. Using a rubber spatula fold the cream mixture into the chocolate mixture. Pour into the prepared pan and cover with plastic wrap. Refrigerate overnight.

6. Remove from pan onto plate and garnish with dried fruit and nuts. Serve with shortbread cookies or biscotti.
